One Bag Chicken Dinner

  • 2 lbs. Tyson® Boneless Skinless Chicken Thighs
  • ¼ red bell pepper, thinly sliced
  • ¼ yellow onion, thinly sliced
  • 1 (1.5 ounce) packet dry fiesta seasoning
  • 6 cloves garlic, smashed
  • ½ cup white rice
  • Tortilla bowls


Preheat an outdoor grill over high heat (450-500°F). Fill a large pot with water and place on the grill. Bring to a boil.

Combine all of the ingredients into a slow-cooker bag and tie tight, removing as much air as possible from the bag. Place into the pot of water and cook for 40-45 minutes or until the rice is tender and the chicken is thoroughly cooked to an internal temperature of 170°F.

Pour all contents of the bag into a mixing bowl and using two forks shred the chicken while mixing the seasoning throughout. Serve in tortilla bowls with your favorite condiments like sour cream, guacamole or salsa.
